Since ancient civilizations, cheese has been of particular interest to humans because it can be stored for times of famine. Cheese was also considered a good food for travel: easy to transport, easy to store, and rich in fat, protein, calcium, and phosphorus. Cheese is lighter and more compact than milk, and can be stored for a longer period.
Although the origin of cheese seems to be an ongoing debate, there is agreement on a historical range between 8000 BC, when sheep were domesticated, and 3000 BC.

The oldest and most common legend about the origin of cheese tells the story of an Arab merchant. On a long journey through the desert, the merchant put milk in a container made of a lamb's stomach. Despite these legends, many authors believe that cheese was already known in prehistoric times. However, the most documented evidence we have comes from a study by scientists at Pennsylvania State University in the United States. This study reports the discovery of soft cheese and yogurt remains on the Dalmatian coast of Croatia. These remains are the oldest evidence of cheese production, dating back 7,200 years.

Types of cheese categories
Cheeses are divided according to the country of production, type of milk, shelf life, taste and use. Many cheeses are produced under unique conditions and cannot be produced under other conditions, such as Roquefort and Manchego. Some cheeses, although they come from a specific region, are also produced in other regions. For example, although Gouda cheese is a type of Dutch cheese, it is now produced in all countries.
Cheeses are divided into several categories based on their characteristics. These characteristics include the type of milk ingredients, the enzyme used to sour it, the animal's diet, the method of processing, and the moisture content of the cheese.
• Low-moisture cheeses (13 to 34 percent) include Douman cheese, Parmesan cheese, dry ricotta cheese, Goji toast cheese, and mesozoic cheese.
• Medium-moisture cheeses (34 to 45 percent) include Edam cheese, white feta cheese, Swiss cheese, Cheddar cheese, Gouda cheese, and Lignan cheese.
• High-moisture cheeses (45 to 55 percent) include mozzarella, camembert, local cheese, pizza cheese, and blue cheese.
• Very high-moisture cheeses (80 to 85 percent) include cottage cheese, ricotta, impastato cheese, Neufchatel cheese, and cream cheese.

3. Soft cheese retains a higher percentage of water in its texture compared to hard cheese and naturally has a lower percentage of nutrients.
4. In 100 grams of regular cheese, there are 30 kilocalories of energy, 10 grams of salt, 19 grams of protein, 23 grams of fat and 380 milligrams of calcium.
5. Some nutrition experts believe that whey can replace milk because in addition to its shelf life of up to 2 months, it does not cause allergies in the body of those who are unable to digest milk lactose (those who feel bloating and abdominal pain when eating milk).
6. Those with high blood cholesterol should use low-fat types of cheese. Of course, the role of cheese in increasing blood cholesterol is only 3 to 4 percent.
7. If you need to freeze food under certain circumstances, you can do this with ripe cheese. However, in the long run, some changes will occur in them. Frozen cheese needs at least 2 hours to prepare itself for eating.
